With Viper FTP you can edit text files on a remote file server. To edit a file, select the file in the Viper FTP browser and choose Edit from the File menu or press Cmd+J:

When editing a text file on the server, Viper FTP downloads the file and opens it in the user's chosen editor. In Preferences, you can define a list of editors associated with file extensions. When editing a file, the editor assigned to the file extension will be used to edit that file.
Some text editors automatically save edited files at certain intervals. To avoid frequently uploading the edited file during each auto-save, you can pause the saving of edited files. To do this, select "Pause saving remotely edited files":
